Buttermilk Pudding Cake with Blueberry-Vanilla Sauce



Difficulty: ★★☆☆☆ (easy)


Ingredients:
Pudding:
1/4 cup all-purpose flour
1/4 tsp salt
1 1/3 cups buttermilk, shaken
4 Tbs unsalted butter, melted and cooled
3 eggs, separated and room temperature
2/3 cup sugar, divided
Blueberry-Vanilla Sauce:
1 1/2 cup blueberries
3/4 cup sugar
1/2 cup water
1 tsp vanilla extract
Directions:
Preheat oven to 350.
Combine salt and flour in a small bowl.
Whisk buttermilk, 1/3 cup sugar, egg yolks and butter in a large bowl, slowly adding in flour mixture.
Use a hand mixer to whip egg whites in a third bowl until frothy.
Slowly beat (on high) second 1/3 cup sugar, one Tbs at a time until soft peaks form.
Fold in egg white mixture into batter one large spoonful at a time. (Mixture will expand!)
Fit 1 1/2 qt baking dish within a larger baking dish and fill large dish with water to midway point.
Spray smaller baking dish with cooking spray and pour in batter.
Bake for 40 minutes until golden brown.
For sauce: Heat blueberries, vanilla, water and sugar in a small sauce pan over medium-high heat, stirring occasionally until reduced. Serve warm.
